2 salmon filets about 1 inch thick
2 lemons sliced into about 1/8-1/4 inch thick pieces
Dried dill (enough to sprinkle over and cover the filets)
Salt and pepper to taste
|Just continue covering the salmon with the lemon pieces as you see here; this salmon filet is not yet ready for the oven because half of it is exposed! :-)|
Preheat oven to 350 degrees. Place the salmon filets on their own separate sheets of aluminum foil and season each to your liking with salt and pepper. Then add your sliced lemons on top of each filet so that once you are finished, all you see are the lemons. Wrap each filet nicely in its respective foil and bake in the oven for approximately 20 minutes. And done!
PS- I like to serve this with half a cup of whole wheat couscous and asparagus. I just take the asparagus, cut off the bottom inch (because it is tough and difficult to chew), wash them and toss them in a bowl with olive oil so they are nicely coated, dried garlic flakes, salt and pepper and place them in a Pyrex dish at the same time as the salmon and take them out when the salmon is done. (FYI: writing this entry forced me to google what the proper plural form of asparagus is and in case you were wondering, it is asparagus...not asparagui as some INCORRECT websites suggest but that is a topic for another entry).
PPS- My mom places tiny dots of butter after sprinkling the filets with dill and before layering the lemon. This DOES make the salmon very very tasty...but it is butter and it is tasty without, so I am making this optional.
And now you have a DELICIOUS, HEALTHY and SIMPLE meal ready to be enjoyed! Goes great with a glass of Sauvignon Blanc. Mmmmmmmm!
