Yummy Yams with Rosemary



Ingredients:
One large yam or sweet potato
1 tablespoon rosemary (dry or fresh chopped)
2-3 tablespoons olive oil
Salt and pepper to taste

Instructions:

First, pre-heat the oven to 350 degrees.

Then, wash, peel and cut the sweet potato into nice, large pieces as seen below:




Next, place the potato pieces into a Pyrex dish and add olive oil.  Toss pieces well so that they are completely coated with olive oil:

 


And finally, add rosemary, salt and pepper.  Toss well so all ingredients are evenly distributed on the potato pieces.  Place Pyrex dish in oven and bake at 350 degrees for 30 minutes:
 


Now, this is the part that makes the potatoes so delicious…after baking for 30 minutes, turn on the broiler and cook for approximately 7 minutes.  If I were you, about 3 minutes into the broiling process, check on the potatoes and use a spatula to turn them over.  Then broil for an additional 4 minutes.  This ensures they are nicely browned on all sides and do not burn. 





Enjoy this delightful dish as a flavorful accompaniment to a main course, or on its own.

PS- yes of course you can do this with regular potatoes as well (red potatoes, Dutch yellow, etc) and yes of course, they will be delicious too :-)
