Three Bean Protein Salad

This three bean salad is packed with protein, serving as a healthy and powerful meal or side dish.  It’s the perfect appetizer for your party.  It's yummy, it's energizing and above all, it's heart healthy. So grab some fresh veggies and beans along with your favorite extra virgin olive oil on your next trip to the grocery store and make yourself a power salad!

1-15.5 ounce can dark red kidney
1-15.5 ounce can garbanzo beans
1-15.5 ounce can black beans
1 green pepper chopped
1/2  red pepper chopped
1/2 orange pepper chopped
3 tomatoes chopped
1 medium red onion chopped
2/3 cup chopped parsley
1 bunch chopped green onions (about 15 green onions)
Juice of 2 lemons squeezed
1/2 cup your favorite extra virgin olive oil
1/3 cup apple cider vinegar
Sea salt and freshly ground pepper to taste


Take your three beans and wash them well in a colander:

Place all three bean types into a large bowl.  Add chopped peppers and onions: 

Next, add add chopped tomatoes, parsley, lemon juice, extra virgin olive oil, apple cider vinegar and salt and pepper to taste: 

Now, take a large spoon and mix all contents of the bowl well and gently.  You can adjust the salt and pepper after the ingredients are thoroughly mixed. 

Serve on a bed of greens and enjoy this refreshing and protein packed dish!
