Too Good Tuna



Have a can of tuna sitting in your pantry?  Looks pretty sad just sitting there, doesn’t it?  Maybe it was part of your “Hurricane Irene” run when you were stocking up on canned foods just in case.  Or perhaps it’s a “safety” item.  You know, those items that are a last resort for a meal when you haven’t had a chance to go grocery shopping.

Well, this entry is going to change all that.  

Let’s transform that small, cylindrical can way in the back into something delicious, healthy and noteworthy.  And to top that, let’s do it in five minutes!   

Ingredients:
One 5-ounce can tuna (I use Trader Joe’s Solid Light Yellowfin Tuna in Olive Oil- in my opinion the best there is)
2 tablespoons fat free Greek yogurt
1 heaping tablespoon chopped cilantro
1 green onion chopped into small pieces
About 5 large red grapes cut into fourths
Salt and pepper to taste

Instructions:
With your tuna in a bowl, add the Greek yogurt and mix well using a fork.  Add cilantro, green onion, salt and pepper to taste and mix again.  Finally, add the grapes and mix using care not to smash them.  Serve on a bed of greens or in a warm whole-wheat pita.  Enjoy this tasty, healthy dish as a snack or a light meal.

PS- to make it extra delicious, add a tablespoon of reduced fat mayo!

I am so excited to try this! With my egg allergy, I've had to avoid anything with mayo, including tuna salads. I miss it, so I look forward to this healthy and allergy-friendly version. Thank you!

Substituting mayo with yogurt makes these dishes (try the curry chicken salad-one of my earlier entries) healthier and still bursting with flavor. Hope you like it!
