Ginger Dill Salad Dressing

1/3 cup balsamic vinegar
1/2 cup extra virgin olive oil
1/4 cup fresh dill chopped
2 garlic cloves
1 tablespoon fresh ginger root
Salt and pepper to taste

Place all ingredients into food processor and puree.

Use over salad of your choice.  One of my personal salad favorites is mixed greens, cherry tomatoes, scallions, Persian cucumbers and fresh dill.
