Avocado and Gruyere Frittata

1 ripe avocado sliced
1/2 cup sliced mushrooms
1/4 cup chopped fresh parsley
2 cloves crushed garlic
3 chopped scallions
1-2 tablespoons olive oil
2 tablespoons grated Gruyere
4 eggs and 2 egg whites well beaten (I use organic, cage-free)
Salt and pepper to taste


First, prepare your veggies (slice your mushrooms, chop your parsley and scallions etc):

Next, sauté the scallions and crushed garlic for a few minutes:

Add the mushrooms and continue to sauté (preheat oven to BROIL now):

Add fresh parsley and stir.  Next, add beaten eggs to the pan and add avocado pieces on top gently pressing each one into the egg/veggie mixture.  Add grated Gruyere, salt and pepper to taste:

Once the egg begins to set on the bottom, pop the pan into the broiler for 2-3 minutes (or a little longer if you like your frittata more well done).
