I threw together this blackened seasoning blend myself. I am sure you can find delicious pre-made seasonings at your local fresh market or even at Williams Sonoma (no I don't work for them, but the way a kid feels in a toy store...that's how I feel at WS). Anyway, feel free to tweak the seasoning to your liking (it's always fun to experiment with what's in the spice rack!)...
For the seasoning-
2 tablespoons paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon onion powder
1 teaspoon garlic salt (http://www.savoryspiceshop.com/blends/ggslt.html)
For the salsa-
1 avocado diced
1/4 cup chopped red onion
2 teaspoon finely diced jalapeno pepper
4 tablespoons lime juice
Fresh chopped cilantro to taste (I used about 3 tablespoons)
1 tablespoon extra virgin olive oil
Salt to taste
2 tilapia filets
2 tablespoons olive oil
First, prepare the salsa by combining all of the ingredients (avocado, onion, pepper, lime juice, olive oil and salt) and set aside.
Next, combine the ingredients for the seasoning in a plate. Wash the tilapia filets and place them on the "seasoning" plate, turning them over to make sure they are well coated with the spice rub. Heat skillet with olive oil to high and cook tilapia for approximately 3-4 minutes on each side:
And that's IT! Plate the tilapia and add a little lime juice on top. Garnish with fresh cilantro and a side of avocado salsa.
