#DelishNutrishDish Challenge: "Me likes what me likes!"


Wow!  So picking an ingredient for the #DelishNutrishDish Challenge was a lot more challenging than I thought it would be!  Probably because I love them all.  I literally spent hours researching, debating and consulting my fellow cooking enthusiasts trying to find the perfect ingredient. 


I needed the ingredient to be high in nutritional value and accessible throughout the world so that everyone can participate.  And finally for the first food challenge, I wanted the ingredient to be non-intimidating.   In the upcoming challenges, I will be introducing both common and more exotic ingredients so that we can all learn about and enjoy diverse and nutritious food together.

For the first #DelishNutrishDish Challenge, I have chosen Popeye the Sailor Man's favorite ingredient:


SPINACH

Spinach is amazing and in my opinion, completely underrated.  Low in calories (only 40 calories per cup!) and bursting with nutritional value, spinach has many health benefits.  This green leafy veggie is packed with antioxidants, vitamin A, K and C, folate, magnesium, manganese, iron, fiber, calcium and protein.  Its nutritional value rivals that of kale and garlic.  Researchers have found that spinach plays a role in fighting various types of cancer (breast, stomach, ovarian and prostate), heart disease, high blood pressure, diabetes, osteoporosis and arthritis.  Who knew Popeye was being so proactive about fighting preventable disease?!    

And in case you were wondering, spinach goes way back to fourth century Persia.  From there, it ventured over to China, Europe and then to the United States, currently one of the world’s largest producers of spinach worldwide.  So, whatever continent you happen to be on, I invite you to add spinach to your grocery list (if it isn't already there) and participate in this challenge!  Looking forward to some healthy cooking together and sharing our recipes.
