Japanese Guacamole

I always thought guacamole had to be just one way.  You have the avocado of course, the lime, cilantro, some garlic…mix it up and then tweak it here and there depending on your mood.  But that all changed the day my husband said he’d make an avocado snack for us- Japanese style.  He came out of the kitchen with a plate of sliced avocado positioned next to a tiny dipping bowl of soy sauce and a lemon wedge.  “Try it” he said.  I love avocado.  But adding the lemon juice and soy sauce to the tasty green slice took my love to the next level.  It is truly a simple and delicious treat.  This gave me an idea- why not Japanese Guacamole?  A heavenly, multi-cultural, culinary fusion.

Tomorrow is Valentine's Day so make this for that special someone.  Because nothing says "I love you" like a bowl of guacamole-Japanese style :-D

1 avocado sliced
1 scallion chopped
1 tablespoon lemon juice
Reduced sodium soy sauce to taste (I use about 2 teaspoons)

Place all ingredients into a bowl and combine well (mash avocado to your desired texture).  Enjoy alone, in place of mayo on your favorite sandwich or my favorite- spread on your favorite piece of bread.
