Ready in under 5 minutes, packed with protein and fiber these tasty bites will make you happy...
1 cup old fashioned oven toasted oats straight out of the box
1/4 cup peanut butter
1 tablespoon shredded unsweetened organic coconut
2 tablespoons dark chocolate chips
2 tablespoons raisins
Just mix all the ingredients thoroughly and form into tiny bites (will make about 12). The consistency is dense so it is best to put a little dollop in the palm of your hand and make a fist around it. They will form more easily that way. I like to store them in the fridge.
Perfect before running out the door on your way to class or work. Or, enjoy one or two of these bites as a snack when you need a pick-me-up energy boost :-)
PS- perfect excuse to squeeze some more fiber into the day
PPS- reduce the peanut butter portion by 1-tbsp and substitute 1-tbsp Nutella for a yummy twist
