Traditional Persian Salad Shirazi is enjoyed throughout Iran and is typically made with tomatoes, cucumbers, onions and fresh herbs (usually parsley). This salad (minus the chick peas) was a staple in our family at dinner on most nights. I added chick peas to mine for a protein boost and so that you can enjoy this salad as a hearty lunch that will hold you over through the afternoon. Feel free to omit them if you are looking to have this salad as a light accompaniment to your lunch or dinner.
Ingredients:
1 cup cherry or grape tomatoes halved
2-3 Persian cucumbers sliced
1/4 cup red onion thinly sliced
1/4 cup fresh chopped parsley or cilantro
1/2-3/4 cup chick peas
Sea salt and fresh ground black pepper to taste
Juice of half a lemon OR 3 tablespoons balsamic vinegar
3 tablespoons extra virgin olive oil
Instructions:
Combine all ingredients in a large bowl and ENJOY! :-)
PS- feel free to chop your veggies to the size and shape of your liking!
