Cauliflower is delicious. So is curry. Put them together and you have a match made in heaven.
I could go on and on about the nutritional value of cauliflower...how it is a cruciferous veggie packed with Vitamins C, K, folate and the list goes on...how it has been found to play a significant role in cancer prevention specifically with respect to breast, bladder, colon, prostate and ovarian...how it offers strong digestive support not only because of its high fiber content but also because it contains a substance that protects the stomach lining by both preventing overgrowth of a bacteria called H.pylori in your stomach and the adherence of this bacteria to the wall of the stomach.
In short, cauliflower rocks.
Now, time for one of the easiest and most delciously healthy recipes/snacks ever :-)
One head of cauliflower washed, pat dry and cut into pieces as in photo
2 tablespoons olive oil
2 teaspoons of your favorite curry powder (try the Savory Spice Shop's Medium Yellow Curry and it's salt-free! http://www.savoryspiceshop.com/blends/curmed.html)
Sprinkle of nutmeg
Salt and pepper to taste
Preheat the oven to 400 degrees and literally just combine the ingredients above in a Pyrex dish making sure the seasoning is well distributed on all the cauliflower pieces. Pop into the over and 20 minutes later remove and enjoy this ridiculously yummy and nutritious side dish or snack.
PS- sometimes, I add chick peas or raisins for fun depending on my mood :-)
PPS- the cauliflower will be a little crunchy which is how I like mine--you can leave it in another 5-10 minutes but not longer because it's best not to overcook
