Spicy Garlic Shrimp with Basil Fettuccine


This is one of my most recent scrumptious kitchen creations.  Other than peeling and deveining the shrimp, the preparation is very low maintenance.  If you don't have time, you can just purchase already peeled and deveined shrimp instead.  The combination of flavors in this dish is simply delicious.  Enjoy!


Ingredients:

Shrimp
2 tablespoons olive oil
1 lb peeled, deveined shrimp
2 large cloves garlic crushed
Red hot pepper flakes to taste
One good squeeze of fresh lemon (~1/2 tablespoon fresh lemon juice)
1/3 cup white wine (I recommend Sauvignon Blanc)
2 tablespoons fresh chopped basil

Fettuccine
1/2 box whole wheat fettuccine
1/3 cup fresh chopped basil
2 tablespoons olive oil
Salt and pepper to taste

Instructions:

1.  Saute crushed garlic and red hot pepper flakes on medium-high for a few minutes until just garlic begins to brown:

 

2.  Add shrimp and saute for 3 minutes on one side:


3.  Flip shrimp and saute for another 3 minutes.  Then add lemon juice and stir.  Next, add white wine and reduce to desired consistency.  Add the basil after ~1 minute before dish is ready to avoid overcooking the herb and mix ingredients well:



Prepare fettuccine according to package instructions.  After straining pasta in colander, add olive oil to pot along with fresh basil, salt and pepper.  Saute ingredients for 2-3 minutes and add pasta back to pot, combining all ingredients well.  Adjust olive oil, salt and pepper if needed.

Serve shrimp over basil fettuccine and enjoy!
