Healthy and Satisfying Mixed Green Salad

I made this delicious and healthy salad for lunch with the exciting and colorful ingredients in my fridge.  The fresh dill along with the feta really spruce it up and personally make me happy :-)  This salad is satisfying, refreshing and is ready in no time.  I also whipped up a tasty dressing using champagne vinegar and extra virgin olive oil along with a few other goodies-- I'll include the recipe for that below as well.  Enjoy!

~8-10 ounces washed mixed greens
2-3 Persian cucumbers or 1/2 British cucumber sliced
2/3 cup grape tomatoes halved
1/2 red bell pepper sliced
1 scallion finely chopped
1/3 cup shredded carrots
2/3 cup dark red kidney beans
~3 tablespoons freshly chopped dill
~3 tablespoons reduced fat feta cheese

1/4 cup champagne vinegar
1/3 cup extra virgin olive oil
Few shakes of garlic salt
Pinch of ginger powder
Pinch of dried oregano and basil (to taste)
Salt and freshly ground black pepper to taste

After washing and chopping, add all salad ingredients to a large bowl.  In a separate bowl combine all dressing ingredients.  Either add dressing to large salad and toss or plate salad individually and add desired amount of dressing to each dish.   

Ready to be eaten :-)
