Treat yourself to this delicious open-faced breakfast sandwich. The refreshing mixed greens and avocado topped with the cozy and warm sunny side up egg will make you happy.

1 piece of your favorite sliced bread toasted (sourdough or multigrain are my favorites)
Handful of mixed greens washed
1/2 avocado sliced
1 Pete and Gerry's Heirloom brown egg cooked sunny side up with olive oil
Salt and freshly grated black pepper to taste
Take your toasted slice of bread and arrange the mixed greens on top. Then add the sliced avocado and finally the sunny side up egg. Season with salt and freshly grated black pepper to taste.
Enjoy this simply yummy and nutritious dish for breakfast or lunch!
