A tartine is French for an open sandwich, especially one with a rich or elaborate topping. While in France, I enjoyed many tartine varieties so much so that when I returned, I had the burning need to create my own. I thought I would share one of my favorite tartine kitchen creations with you. The combination of smoked salmon, goat cheese and avocado along with the garnish is absolutely delicious. This is a light, refreshing and healthy dish you can enjoy for breakfast or lunch. Bon appétit!
Slice of your favorite bread toasted (I used sourdough)
Handful mixed greens
Few slices smoked salmon
Half avocado sliced
1 scallion finely chopped
Sprinkle of fresh dill chopped
Squeeze of fresh lemon juice
This is the simple part. Just spread some goat cheese on your toast. Arrange the mixed greens on top, then smoked salmon followed by the sliced avocado. Finally, garnish with scallion and fresh dill. Drizzle with fresh lemon juice and enjoy!
