Summer Celebration Salad

Fresh tomato and mozzarella on a bed of watercress

This salad is a delightful alternative to the traditional mozzarella, tomato and basil version.  At my local market, the watercress looked so fresh and appealing that I had to pick some up and use it as a substitute.  Also, the yellow tomatoes were are a fantastic addition to make this salad even more colorful and add a variety of flavors to the mix.  It turned out delicious and I had to share it with you.  


Fresh sliced mozzarella
Vine ripe tomatoes 
Extra virgin olive oil 
Balsamic vinegar
Fine sea salt
Coarsely ground black pepper

On a bed of watercress, arrange the sliced tomatoes and mozzarella alternating according to your preference.  Drizzle extra virgin olive oil and a splash of balsamic vinegar.  Finish with sea salt and coarsely ground black pepper to taste.

PS- to make this salad more substantial and equally if not more delicious, add slices of avocado :-)
