2 tablespoons olive oil
2 organic eggs
1 large potato
Salt and pepper to taste
1. Chop potato into small pieces and saute in olive oil on medium heat for about 15-20 minutes or until golden brown. Add salt to taste.
2. Crack each egg on top of the potatoes and using your spatula gently distribute the egg to cook it evenly (you may want to cover the pan instead). Cook egg until desired consistency. Add fresh black pepper to taste.
