This salad is so refreshing and gratifying. My mom used to make it for me growing up and I enjoyed it as much then as I do now. I love garnishing it with dolmas (stuffed grape leaves) at the end. As an alternative, you can do so with pickled hot peppers. Just writing about it is making me hungry :-) Hope you enjoy!
Half head of iceberg lettuce washed and chopped into bite sized pieces
1 medium tomato sliced
2 Persian cucumbers sliced
1/2 small red onion sliced
1/4 cup pitted Kalamata olives
2 tablespoons fresh oregano chopped
2 tablespoons crumbled low-fat feta cheese
For the dressing combine the following:
1/4 cup apple cider vinegar
1/4 cup extra virgin olive oil
Fine sea salt and freshly ground black pepper to taste
Combine all salad ingredients in a large bowl. Add dressing and enjoy!
