Orzo and Olive Salad


This salad is great alone or as an accompaniment to grilled chicken or shrimp.  It's very simple and very tasty.  Perfect for summer!

Ingredients:

1 cup whole grain orzo
1 cup grape tomatoes sliced in fourths
1/2 cup pitted kalamata olives sliced 
3 scallions finely chopped or 1/4 cup red onion finely chopped
1/3 cup fresh basil or cilantro
2 tablespoons olive oil
Salt and pepper to taste


Directions:

1.  Cook orzo according to package instructions and allow it to cool for 15 minutes.  

2.  Gently combine all ingredients.

3.  Serve and enjoy!
