Whole Wheat Penne with Garlicky Broccoli Rabe

Looking for a quick, delicious and healthy dish to enjoy alone or with friends or family?  Well look no further.  This easy recipe incorporates the amazing broccoli rabe to create a power dish full of nutrients to energize you.  I hope you enjoy!


1 large bunch broccoli rabe washed and chopped into 1.5 inch pieces (don't spin to remove excess water)
1 head garlic sliced
1 12 oz. package whole wheat penne
~1/4 cup olive oil
Fine sea salt and freshly ground black pepper to taste
Fresh shaved Parmesan cheese to taste


1. Sauté garlic in ~3 tablespoons olive oil.  After few minutes or when garlic begins to brown, add chopped broccoli rabe and continue to sauté.  Add salt and pepper and combine ingredients well.  Cover and allow to cook on medium for ~20 minutes, stirring occasionally.  

2.  Cook penne according to package instructions.

3.  Once penne and broccoli rabe are done cooking and penne is strained, combine them and add remaining olive oil as well as salt and pepper to taste.  Gently stir all ingredients so thoroughly mixed.  

4.  Serve in bowls and garnish with fresh shaved Parmesan cheese.
