Curried Tuna Salad




This tuna salad is DELICIOUS and I hope you will try it soon.  It's ready in minutes and super healthy.  I love it served in toasted whole wheat pita bread but it is equally tasty on a bed of your favorite greens (arugula, mixed greens, take your pick)!




Ingredients:
1 can tuna (I used Trader Joe's solid white albacore tuna in olive oil)
1 scallion finely chopped
Handful of chopped apple (I used Honeycrisp)
2 tablespoons pecan pieces
1/2 teaspoon green curry powder
1 tablespoon mayonnaise
Freshly ground black pepper to taste

Directions:
Just combine all ingredients in a bowl.  Add more curry powder if you wish to taste.  Enjoy this amazingly delicious dish for lunch or a snack.  YUM!





PS- Great lunch idea for kids- they LOVE this :-)
