Crisped Oven Roasted Brussel Sprouts

These oven roasted brussel sprouts are one of my true veggie loves.  They come out crispy on the outside and bursting with flavor.  All you need are a few simple ingredients and some love to have a delicious and healthy side dish or snack.  I like to make a huge batch so that there are leftovers I can snack on throughout the week.  And this dish is PERFECT for the holiday season as a side to pretty much any main dish you are preparing!  Packed with Vitamins K and C and an excellent source of manganese, folate, fiber, potassium and Vitamins A and B6, brussel sprouts support heart health, digestive health and protect against cancer.  I know what I'm making as a veggie side this week!

1 pound brussel sprouts
2 tablespoons olive oil
1.5 tablespoons soy sauce
Garlic powder to taste (I'm a huge garlic fan so I like to give it multiple strong shakes)
1/2 teaspoon sea salt or more to taste
Freshly ground black pepper to taste or red hot pepper flakes if you're feeling bold

1.  Preheat oven to 425 degrees.  Wash the sprouts and remove any outer leaves that don't look fresh, trim the ends and cut into halves.  Toss all ingredients in a Pyrex dish making sure they are well combined- I like to taste one of the sprouts prior to cooking to make sure I have the flavor adjusted perfectly.

2.  Roast for ~10-15 minutes depending on how well you like your veggies done.  Then flip with a spatula and roast for another 10-15 minutes.

There!  Now wasn't that easy :)  Enjoy this amazingly delicious veggie treat over the holidays and all year round!
