This wrap is so simple and so very tasty! It is a traditional Persian wrap and is one of my favorite things on earth. I grew up with feta as a staple in my diet. My parents used to make this wrap for me for breakfast and now as an adult, I find it to be one of the most satisfying grab and go breakfasts or snacks. Packed with nutritious ingredients, it will keep you energized for many hours. I just make one the night before and enjoy one half for breakfast and the other as a snack.
All you need is a whole wheat tortilla, some feta cheese, 1-2 sprigs of fresh parsley, cilantro, basil and tarragon (washed), half a scallion washed and sliced lengthwise and a handful of unsalted raw almonds or walnuts.
Just warm the tortilla so that it is lightly toasted and arrange all the ingredients as seen, roll it up and enjoy!
As a note, you can use just one of the herbs or any combination you like. Traditionally all the mentioned herbs are used in the wrap. Also, for added deliciousness, soak your almonds or walnuts in salt water the night before!
