As promised on my Facebook page, today I'm going to share one of my favorite pasta dishes with you. You'll be especially enthused to know that this yummy dinner will be ready in under 15 minutes! I love broccoli. Not only are these tiny trees incredibly delicious but they are packed with nutritional value...Vitamins A, C, K, fiber, folate and the list goes on and on. Over the weekend, I usually pick up a few bags of broccoli florets, wash them and keep them in tupperware in the fridge for an easy grab-and-go snack during the work week and also for easy peasy recipes like the one I'm about to share with you. This dish is super tasty and the coolest part is it will leave you with minimal dishwashing after! That's right! All of the work is done using just one pot because who wants to wash a whole stack of dishes during the week? Not me! :-) Enjoy!
8 ounces of your favorite pasta (spaghetti, rigatoni, penne)- healthiest with whole-wheat pasta
2 cups washed broccoli florets
1/4 cup olive oil
3 tablespoons dried basil (or 1/3 cup fresh basil- sometimes I use both since they each have a deliciously unique flavor)
2 teaspoons granulated garlic (you can use garlic powder but granulated garlic is tastier in my opinion)
Sea salt and freshly ground black pepper to taste
Freshly grated Parmesan cheese to taste
1. Prepare pasta according to package instructions.
2. Two minutes before the pasta is finished cooking, add the broccoli florets to the pasta cooking in water.
3. Strain the pasta and broccoli combo and return back to the pot. Add olive oil, basil, garlic, salt and pepper to taste and combine ingredients well. Adjust seasoning and olive oil to taste at this point.
4. Serve in bowls and finish with freshly grated Parmesan.
