This pizza is one of my go-to dinners on busy weeknights. I always make sure to have most if not all of these ingredients on hand so that when I get home on those long workdays, this is a quick, delicious and healthy option. It always hits the spot. Feel free to get creative with the ingredients. I use all kinds of veggies- broccoli, zucchini, spinach, roasted red peppers and the list goes on... In under a half hour, I promise you'll have a totally tasty and satisfying dinner. Enjoy!
2 pieces of panini bread (any thin bread would do, even pita)
4 jarred artichoke hearts cut into fourths
1/2 cup grape tomatoes cut into halves
1 cup washed organic arugula (make sure to spin it so the excess water is removed)
1/4 Kalamata olives cut into halves
Mozzarella cheese thinly sliced
~1/4 cup tomato paste
Sea salt and freshly ground black pepper
1. Preheat oven to 350 degrees.
2. Place tomato paste into a small bowl and add water (1-2 tablespoons at a time), mix well until become a nice "sauce-like" consistency. Then add about a tablespoon of olive oil and combine ingredients well.
3. Toast panini bread until it just starts to become crisp. Using a spoon, spread tomato paste onto each panini bread. Add arugula, tomatoes, olives, artichokes and top with thin slices of fresh mozzarella. Drizzle with olive oil and add sea salt and freshly ground black pepper to taste.
4. Pop into oven for ~20-25 minutes....and done!
