Looking for a gourmet dish in a snap? You have come to the right place! This pasta dish is bursting with rich Mediterranean flavors. The artichoke hearts, olives and sun dried tomatoes, each uniquely delicious individually, come together with such synergy I am getting hungry just talking about it :) I typically have all the ingredients or some variation of them on hand so this dish is perfect for a busy workday since it takes such minimal effort to make...but alternatively it's also perfect for a special occasion because no one needs to know how much work you put in and no one will ever suspect once they try it! 1 cup jarred artichoke hearts
1/4 cup Kalamata olives
2 tablespoons sun dried tomatoes
1-2 teaspoons fresh oregano
1 large clove garlic
1/3 cup extra virgin olive oil
1/2 pound spaghetti
Fine sea salt to taste
Freshly ground black pepper to taste
Freshly grated Parmesan cheese
1. In a food processor, combine first 6 ingredients using "pulse" mode for a few seconds at a time. You want all the ingredients nice and finely chopped into a sauce where you can taste the individual elements but not puréed.
2. Prepare spaghetti according to package instructions. Add Mediterranean sauce and add salt and pepper to taste if desired.
3. Serve in individual bowls and finish with freshly grated Parmesan cheese.
PS- feel free to change it up...don't have oregano? Use basil or a touch of rosemary :-) and most importantly ENJOY!
