Dive into this Endive Salad

This salad is not only bursting with flavor but check out the gorgeous colors!  A simple vinaigrette brings all the delicious ingredients together- a true palate pleaser, perfect for summer :-)

Ingredients:
3 Belgian endives (for added color use multicolored), leaves separated, washed, spun dry and chopped
3/4 cup cherry tomatoes cut in half
1/2 yellow bell pepper cut into bite sized pieces
2 Persian cucumbers cut into bite sized pieces
1/2 cup artichoke hearts cut into fourths

2 tablespoons extra virgin olive oil
3 tablespoons champagne vinegar
Sea salt and freshly ground black pepper to taste

Directions:
Combine first five ingredients in a bowl.  Add olive oil, vinegar and sea salt and pepper to taste.
