"Bettah with Feta" Mediterranean Shrimp

This is a delicious shrimp dish that is ready in no time.  The feta adds SO much to the rich Mediterranean flavors.  If you're in the mood for shrimp, this recipe literally takes under 15 minutes to be completely ready and it doesn't require any exotic ingredients.  Enjoy it alone or over rice or pasta with a side of veggies.  It's totally bettah with feta! :)


1/2 lb peeled, deveined shrimp washed and pat dry
6 Campari tomatoes chopped (you can use any tomatoes but these are my favorites full of flavor, not too big and not too small)
1 clove crushed garlic
1/2 shallot finely chopped 
1/4 teaspoon paprika
1 teaspoon olive oil
1 tablespoon fat free feta cheese
2 tablespoons chopped fresh basil
Fine sea salt and freshly ground black pepper to taste


1.  Sauté crushed garlic and shallot in olive oil.  Once they start to brown, add chopped tomatoes with paprika and sauté another few minutes until tomatoes are softened.  

2.  Add shrimp and feta and sauté together another 3-4 minutes.  Add salt and pepper to taste.  

3.  Remove from heat and add fresh basil.  Give it a good stir, serve into dishes and enjoy!

PS- Don't have a shallot?  Don't worry!  You can omit this ingredient and it will still be delicious!
