Kale and Garlic Super Pasta



Here's a simple, delicious and nutritious dish making use of just a few ingredients including kale, a nutritional powerhouse packed with flavor and sure to energize you!  It's the perfect comfort food, especially on a cold winter night.  Cheers!



Ingredients: 

10 ounces organic kale washed and spun dry
1 head garlic coarsely chopped
1 12 oz. package whole wheat ziti or penne
~1/4 cup olive oil
Fine sea salt and freshly ground black pepper to taste
Fresh shaved Parmesan cheese to taste

Directions:

1. Sauté garlic in ~3 tablespoons olive oil.  After few minutes or when garlic begins to brown, add kale and continue to sauté.  Add salt and pepper and combine ingredients well.  Cover and allow to cook on medium for ~15-20 minutes, stirring occasionally.  

2.  Cook pasta according to package instructions.

3.  Once pasta is strained and kale is ready, combine them and add remaining olive oil as well as salt and pepper to taste.  Gently stir all ingredients so thoroughly mixed.  Top with Parmesan cheese, grab your fork and get busy!
