Wasabi Avocado Tuna Bowl

So here is my advice: Please. Make. This.  I was experimenting with some of my favorite ingredients earlier this afternoon which resulted in this absolutely delicious tuna bowl with a wasabi kick.  It's so good...words will not do it justice.  It takes literally 5 minutes to make and is perfect for lunch, as a snack or even a light dinner.  Serve over greens tossed with some EVOO, toast (Ezekiel toast is super yummy and my favorite), or even over some brown rice or quinoa for a more filling meal.

1 can tuna (in my opinion Trader Joe’s Solid Light Yellowfin Tuna in Olive Oil is the yummiest)
2 tablespoons fat free Greek yogurt
1 scallion chopped
2 tablespoons chopped cilantro
1/4 avocado diced
Wasabi to taste (I used 1/2 teaspoon)
Optional: 1 tablespoon reduced fat mayo for extra tastiness

First combine tuna, Greek yogurt, wasabi and mayo (if using).  Then add the scallion and cilantro and combine.  Finally mix in the avocado pieces, being careful not to smash them.  And....done!  Does it get any easier than that?!  Prepare for extreme yumminess ;)
