It's the best because it's delicious, super heart healthy AND ready in minutes. This tasty little wrap is packed with such nutritious ingredients from avocado to black beans to cilantro---YUM! Need I say more ;) This recipe makes two breakfast burritos- Enjoy!
3/4 cup black beans
2 egg whites
2 teaspoons olive oil
1 tablespoon reduced fat shredded cheese of your choice
Fine sea salt and freshly ground black pepper to taste
Whole wheat tortilla or lavash
Few slices avocado
Finely chopped scallions
1. Heat tortilla or lavash in toaster oven for a few minutes until just starting to crisp (you don't want it too crispy because you are going to wrap it). Meanwhile, coat pan with olive oil and over medium heat add egg whites to black beans along with some salt and pepper and scramble until eggs are thoroughly cooked (about 2-3 minutes). Remove from heat, add cheese and mix.
2. Place black bean, egg white and cheese combo into tortilla or lavash, add salsa, avocado slices, cilantro and some scallions, wrap it up and go to town!
