Super Yummy Asian Peanut Sauce

I love peanut sauce...on my soba noodles, mixed green salads, a hybrid of the two as you see here or as a dip for veggies, tofu or meats like chicken/beef satay!  Just place the ingredients for the dressing into a blender, mix until smooth and you're ready to rock and roll!  Pictured above, this tasty dressing is seen with a blend of greens, soba noodles, scallions, baby bella mushrooms and Persian cucumbers...ingredients that I had on hand in my fridge.  Get creative with your veggies- red bell peppers, sprouts, carrots, snap peas etc would all be awesome additions!

1/3 cup peanut butter, preferably not chunky
 (I use freshly ground PB from Whole Foods...YUM!)
1/4 cup reduced sodium soy sauce

1/4 cup water
 (warm water is best)
1/2 tablespoon sesame oil
1/2 tablespoon spicy sesame oil
1.5 tablespoons rice vinegar

2 teaspoons mirin for some sweetness

(want the sauce thicker?  Add some PB!  Thinner?  Add some H2O!)
