The marriage of beets, lentil and feta cheese is one of the most beautifully scrumptious events on earth. Add in some cilantro and Oh. Heck. Yes. I cannot wait for you to try this simple, gorgeous and yummalicious dish packed with nutritious and energizing ingredients!
2 cups cooked lentils
4 medium sized roasted beets diced
1/4 cup chopped red onion
1/4 cup reduced fat crumbled feta cheese
1/4 cup chopped fresh cilantro
2-3 tablespoons balsamic vinegar
2 tablespoons extra virgin olive oil
Freshly ground black pepper to taste
Dash of fine sea salt
Combine first five ingredients, add balsamic vinegar and extra virgin olive oil and finish with salt and pepper. For aesthetic purposes, I usually garnish with a touch of chopped cilantro as well. Enjoy!
