It's a long title I know! But I needed one to convey all that this cookie is! Originally, I named it a "breakfast cookie"... my husband took one bite, gobbled up the entire cookie and immediately asked me what exactly makes this a breakfast cookie? I started by explaining the oats, the raisins, the flaxseed and he wasn't convinced...mainly because he strongly felt this cookie should not be reserved exclusively for a morning meal and he's totally right. This is an awesome grab-and-go bite in the morning but no need to compartmentalize this cookie as a "breakfast"....enjoy it when you feel a snack attack coming on or even for dessert! They're crispy on the outside, soft and chewy on the inside and a cinch to make. Best part is they aren't packed with all the unnecessary calories in those super buttery cookies or processed ingredients in the ones you find on the grocery shelves. Enjoy one with a cup of tea, coffee or my favorite...a tall glass of cold milk, YUM! Have FUN with these "Anytime" cookies anytime you feel the moment is right...we did!!!
Pinch of fine sea salt
2/3 cup organic flour
1/2 teaspoon baking powder
1 tablespoon ground flaxseed
1 teaspoon cinnamon
2 tablespoons melted unsalted butter
1/2 cup organic sugar (I like to use brown sugar)
1/2 teaspoon vanilla extract
1/3 cup apple sauce
1/4 cup water
1 1/2 cups organic old fashioned rolled oats
1/4 cup raisins
1. Preheat oven to 350 degrees. Lightly grease 2 cookie sheets. Combine flour, baking powder, salt, flaxseed and cinnamon. In a separate bowl, combine sugar, butter, egg, vanilla, apple sauce and water. Combine the wet and dry mixtures. Finally stir in the oats and raisins.
2. Drop by heaping (table)spoonfuls onto cookie sheets and bake until edges are nicely browned about 22-25 minutes or until cookies are thoroughly cooked.
