Garlicky Cilantro Salmon with a Kick


This recipe is SUPER easy to make and bursting with flavors!  If you love cilantro and garlic as much as I do, you'll love this salmon dish.  What a delicious and exciting way to get your omega-3 fatty acid fix!!!

Ingredients:
1 lb organic/wild salmon
About 2/3 cup chopped cilantro or enough to cover salmon
Few large cloves of garlic thinly sliced
2 teaspoons extra virgin olive oil
Red hot pepper flakes and a touch of fine sea salt to taste

Directions:
1.  Preheat oven to 350 degrees.

2.  Cover salmon with chopped cilantro and dot it with sliced garlic pieces.  Add salt and red hot pepper flakes and finish with olive oil.  Use your hands to gently rub the salmon with oil so that it is evenly distributed.

3.  Bake in oven for ~40 minutes or until salmon is fully cooked.

As with the other salmon recipe both of which are wonderful, I find that a cooking time of 30 minutes at 350 seem to be more than sufficient time to cook.
Anything longer and the flesh of the fish becomes dry!
