The beauty of this dish is that when there are leftovers, you have a scrumptious lunch to look forward to the next day. Add the chicken kabob pieces (and leftover grilled veggies if you have them) to a bed of mixed greens and fresh veggies...a splash of fresh lemon juice and extra virgin olive oil...and you have a delicious and flavorful salad to chow down on the next day!
