We went apple picking this weekend on such a beautiful fall day and returned with tons of varieties of scrumptious treats from Winesap to Granny Smith to Braeburn and the list goes on! Here is my first apple recipe of the season using our newly picked fruits. Hope you like this nutritious salad that's packed with fun and energizing ingredients!
6 ounces organic wild baby arugula washed and spun dry
2/3 cup cooked organic quinoa
1 medium apple of your choice thinly sliced
1/2 cup shredded carrots
1/2 cup edamame
1/4 cup dried cranberries
2-3 tablespoons sunflower seeds
1/4 cup balsamic vinegar
2-3 tablespoons extra virgin olive oil
Finely ground sea salt and fresh ground black pepper to taste
Assemble salad in a large bowl the order in which the ingredients are listed above. Add oil and vinegar and finish with salt and pepper to taste. YUMMY! :)
