Mmm Mmm Mediterranean Meatballs

These meatballs are healthy, delicious and perfect to make-ahead on the weekend.  You can enjoy them over whole wheat pasta with a marinara sauce and some parm, in a pita/flatbread with a tzatziki-like sauce and fresh herbs, incorporated into your favorite soups or over a salad for a healthy low-carb option....so versatile and the perfect comfort food!

1 lb organic lean ground turkey breast
1 medium onion grated (juice squeezed out)
2 crushed garlic cloves
1 teaspoon granulated garlic
1 teaspoon dry oregano
1 tablespoon chopped fresh parsley
1/2 cup plain breadcrumbs
1 teaspoon salt
Generous fresh ground black pepper
1 beaten egg
Olive oil to brush meatballs

1. Preheat broiler and combine first 9 ingredients in a large bowl.
2. Add beaten egg and combine well.
3. Lightly grease baking pan with olive oil and use water to facilitate forming approximately 16 meatballs.  Brush each meatball with olive oil.  Broil for 10 minutes.  Using tongs, flip meatballs and brush with olive oil again and cook until finished (about another 5-10 minutes).

Looking for a delicious simple yogurt-based sauce as an accompaniment?  Combine 3 tablespoons low fat Greek yogurt with 1 tablespoon mayonnaise (Japanese mayo is my favorite here).  Spread sauce on warmed naan, add meatballs and serve with fresh parsley and sliced mini cucumbers.   Mmmm Mmmm!
